- 1 tablespoon butter or use vegan butter
- 3 egg whites
- 1 egg
- 1 cup cooked shrimp
- ½ cup jumbo lump crab meat
- 2 tablespoons Locatelli Parmesan cheese shredded
- ½ tablespoon garlic powder
- 1 teaspoon fresh parsley chopped
- 2 cups arugula
- 1 lemon juiced
- 1 tablespoon olive oil
Cook the Eggs:
Heat the butter in a skillet over medium-low heat.
Whisk together the egg whites and egg and then add to the skillet.
Cook eggs for one minute and then add seafood, Locatelli, garlic powder and parsley and scramble until you have a cheesy fluffy mixture.
